Healthy eating shouldn’t be a chore and can be fun and delicious. Butternut squash is a lower-carb vegetable that you can turn into a different style of spud. Not only can you make this grilled butternut and mince recipe during the week, but it’s also a fun braai idea. The butternut is as the name implies, quite buttery in texture if cooked right, and provides a bowl for your beef mince filling. When grilling on the braai, you add some smokey flavour to the dish too.

Grilled butternut and mince tips

When cooking the butternuts, make sure that you don’t overcook them first as they can be hard to deal with. The rest of the cooking is done in the oven which will soften them up a bit more. You can also add some frozen vegetables into your mince if you want to. When you want to make it less “healthy” and a bit more indulgent, pop some grated cheese on top before putting it into the oven. Serve with a light green salad.

Grilled or Roasted Butternut Squash Recipe

Ingredients

  • 500 g 500 minced meat (If you are only making for 2 people, the cooked mince is never wasted, could be used the next day)

  • 2 2 onions, chopped

  • salt and pepper

  • seasoning of your choice

  • olive oil 

  • 2 cups 2 chicken stock

  • 2 – 4 2 – 4 butternuts, halved

  • 1 cup 1 mixed frozen vegetables of your choice (optional)

  • origanum or parsley for garnishing 

  • 2 cups 2 grated cheese

Method – BuTTERNUT

  • Slice the butternut that you want to use in halves, clean the inside and place in a saucepan with water and bring to boil on stove and cook for about 30 minutes or when slightly soft ensuring. Do not overcook as it will make it difficult to handle.  
  • Braai option: Season with salt and pepper, brush with olive oil and pop onto the braai.
  • For the filling
  • Brown the mince in the frying pan and remove. In the same pan, brown the onions. Mix well.
  • Add the mince back and combine. Add seasoning of your choice and two cups chicken stock.
  • Cover and simmer for 45 minutes or until the meat is soft and delicious. 
  • Place butternut in oven dish of your choice.  Fill butternut squash boats with beef mixture and top with cheese. Grill until cheese is melted, approximately three minutes.
