You can probably still feel your fingers burning from the last time you tried to dig out your rusk from a cup of tea or coffee. In South Africa, we love a good ol’ rusk with our morning cuppa’ and we love dunking it right in. Our buttermilk rusks will bring back the nostalgia and then you can dunk as many as you want to. They are crunchy bars of goodness which also work very well as gifts or bake sale goodies.

Buttermilk rusks suggestions

Did you know that you can make a quick and easy homemade buttermilk? For every 1 cup of milk, stir in 1 tablespoon lemon juice or vinegar. Let the mixture stand for 10 minutes. You can scale the recipe up or down depending on how much you need. These rusks take two baking sessions and the second is just to dry out and can be done on the lowest oven setting for a few hours.

Ingredients

  • 8 cups 8 flour

  • 8 tsp[ 8 baking powder

  • 1 cup 1 butter

  • 1 cup 1 sugar

  • 1 cup 1 buttermilk

  • 2 2 eggs

  • 2 tbsp 2 vinegar

  • salt

Method

  • Mix all dry ingredients together and rub in the butter.
  • Beat eggs and add to milk.
  • Knead well and put into pan about 25x20cm.
  • Spread in the pan and bake at 180°C for 60 minutes.
  • Slice them while warm and let them cool. Turn down the oven to its lowest setting and dry out the rusks until they are ready.
