Buttermilk Flapjacks with Bacon and Corn

Add some fluffiness to the flapjacks by using buttermilk to prepare the batter. This recipe is unique in the sense that bacon strips are first fried to crispy deliciousness. Then, it is covered with the flapjack mixture (containing the sweetcorn). So, at this point, the crispy bacon strip is marrying the buttermilk flapjack batter. The result is a tasty sweet and salty explosion on your taste buds. It is absolutely divine.  

For this buttermilk flapjack recipe, you can use fresh or tinned sweetcorn. So, this is a viable breakfast to prepare right through the year irrespective of seasonal changes. Ingredients

  • 8 rashers of bacon

  • 250 ml self-raising flour

  • 250 ml buttermilk 

  • 1 egg

  • pinch of salt

  • 250 ml grated cheddar cheese

  • 3 spring onions, chopped

  • 1 tin (1 cup ) pitted corn, drained

  • yoghurt and honey for serving

Method

  • Fry the bacon in a heavy based skillet until crispy, drain on a paper towel and set aside.
  • Sift the flour and salt in a mixing bowl.
  • In a jug, add the buttermilk with the egg, and whisk together. Add this mixture to the sifted flour and salt. Stir well with the whisk until there are no lumps. 
  • Add the cheese, spring onions and corn. Mix the ingredients in the thick batter.
  • On medium heat, place a heavy based nonstick pan and add a little oil. Place the bacon in the pan (depending on the size of the pan, start with 2 strips at a time to allow for some space around the bacon strips) and then add a large scoop of dough over the bacon to cover it. Add more oil if necessary. 
  • As soon as bubbles appear in the batter, turn it over carefully with a spatula or egg lifter and fry the other side until golden brown.
  • Place on a paper towel to drain all excess oil.
  • Continue with rest of batter.

Notes

  • Serve with honey or yoghurt or with both.
