Greens are great because they’re so quick to prepare, and many are in season right now. Not to mention that it’s great for your body! I don’t know anyone who eats enough greens, so making them taste less like vegetables and more like a meal on their own is the way to go.

What makes these buttered greens so lovely?

Well, I have topped them with a simple sesame and lime dressing, this dish is full of flavour. The sesame dressing also works well with a range of vegetables.

Serve this dish as a side with your next roast dinner or braai.

A delicious dressing drizzled over steamed green vegetables.

  • 1 head head of broccoli, floreted

  • 1 packet of green beans, top and tailed

  • 1 clove of garlic, finely chopped

  • 2 tsp lightly toasted sesame seeds

  • 30 ml sesame oil

  • 1 tsp soya sauce

  • juice of 1 lime and zest

  • salt and pepper to taste

  • To make the dressing, mix together the sesame seeds, oil, soya sauce, lime and seasoning.
  • Blanch the broccoli and green beans for a couple of minutes. Drain.
  • Add the butter to a frying pan over low heat, and gently sauté the clove of garlic.
  • Add the broccoli and green beans, sauté for a few more minutes, then drizzle over the sesame dressing.
  • Serve immediately, as the beans will go a dullish khaki colour if left in the dressing for too long.
