The weather is still perfect for some outdoor dining like when you’re hosting a brunch with friends. A quiche is often the answer and it’s just a fancy wrd for an egg casserole. This breakfast egg and ham casserole has all of the tasty ingredients you want with your mimosa or coffee. As with many similar recipes, you can get creative with serving sizes, ingredients and even when you’ll be eating this delicious dish with your friends.

Breakfast egg and ham casserole tips

Breakfast and brunch are great times to enjoy your favourite foods and enjoy loads of calories for the day’s activities. You’ve got lots of protein from the ham or bacon and eggs with some crunchy hash brows with lots of tasty carbs. You can also add some green and red peppers into the mix. With a few minutes to go, you can also add some grated cheese on top if you want to get a bit more creative and the fresh spring onions on top add some great freshness.

Ingredients

  • 500 g 500 refrigerated shredded hash browns

  • 1⁄4 cup 1⁄4 butter

  • salt and pepper, to taste

  • 12 large 12 eggs

  • 1 1⁄2 cups 1 1⁄2 half and half

  • 1 cup 1 medium cheddar cheese

  • 1 cup 1 feta cheese

  • 225 g 225 diced ham

  • 1⁄3 cup 1⁄3 chopped green onions

  • 2 1⁄2 tbsp 2 1⁄2 chopped fresh parsley

Method

  • Preheat oven to 180°C. Spray a 35-22cm baking dish with non-stick cooking spray.
  • Melt butter in a large 30cm non-stick skillet over medium high heat. Spread hash browns into an even layer in pan, season with salt and pepper. Let cook until golden brown on bottom about 6 – 8 minutes, then turn and continue to cook 3 minutes longer.
  • Pour hash browns into prepared baking dish, set aside.
  • Add eggs to a large mixing bowl. Break yolks and stir together with a fork until blended.
  • Stir in half and half, cheddar, feta, ham, green onions, parsley and season with salt and pepper to taste.
  • Pour mixture evenly over hash brown layer then spread out with a spatula to even out top as needed.
  • Bake in preheated oven until center is just set, about 40 – 50 minutes. Let cool about 5 minutes before slicing and serving.
