Bran muffins – The ultimate healthy breakfast or anytime bite

Who can resist a warm muffin straight out of the oven, served with butter, jam and cheese?

Running late some mornings? These healthy bran muffins will save the day and your complaining tummy. Classic bran muffins make a healthy breakfast or snack. They are moist, packed full of flavour and easy to make.

Bran is an excellent source of fibre. Play around with a variety of healthy ingredients for unique taste experiences. Try some sunflower seeds or cranberries to make your muffins interesting. This recipe includes raisins, but you can always swap the raisins for chopped dates. Yum!

If you have a large family with a healthy appetite, it’s best to whip together a double batch of bran muffins. These tasty beauties tend to disappear really fast. But then, who can resist a warm muffin straight out of the oven, served with butter, jam and cheese?

Bran muffins are also excellent plate fillers if you need to take a plate of snacks to any family gathering. It is always good to have a healthy option among the less healthy options on a snack table.

This recipe makes 24 medium-sized muffins or 12 super-sized bran muffins.

Ingredients

  • ½ cup ½ oil

  • 2 2 eggs

  • cups brown sugar

  • 2 cups 2 bran

  • cups wholewheat flour

  • 2 cups 2 milk

  • teaspoons bicarbonate of soda

  • 2 teaspoons 2 baking powder

  • 1 teaspoon 1 vanilla essence

  • ½ cup ½ raisins

  • ½ cup ½ carrots, grated

  • 1 cup 1 coconut

  • ½ cup ½ nuts (optional)

Method

  • Preheat oven to 180°C. Line a muffin tray with liners.
  • Mix the oil, eggs and brown sugar together, until the sugar dissolves.
  • Add the bran, flour, milk and baking soda and baking powder, vanilla essence and mix together.
  • Add raisins, grated carrot, chopped nuts and coconut to the mixture.
  • Add the mixture to muffin tins, make sure the mixture fills the tin about halfway with the muffin mixture.
  • Bake for 15 – 20 minutes.
