Family dinner can be simple and quick but sometimes you want to make something special. Often, we take inspiration what the professional chefs do and it’s often simpler than you think. This old-school braised silverside steak recipe gives you a great opportunity to prepare something amazing for your family. This recipe is also great for weekend lunches and dinner party.

Braised silverside steak tips

The easy part for this recipe is a simple marinade which you will be making with onions, garlic, red wine and brown sugar. The sugar will help brown and caramelize the steak when you fry it. Don’t brown the steak too long as you just want colour and then braise it, covered, on the stove until tender. You can add carrots and other vegetables like green beans into the liquid too. The bacon and pork belly add the most amazing flavours to go along with it.

Ingredients

  • 1.5 kg 1.5 whole silverside steak

  • 125 g 125 speck (smoked pork belly)

  • black pepper

  • 250 g 250 bacon

  • 7 ml 7 salt

  • 25 ml 25 olive oil

  • Marindade
  • 25 ml 25 olive oil

  • 2 2 onions, chopped

  • 1 clove 1 garlic crushed

  • 500 ml 500 dry red wine

  • 10 g 10 brown sugar

Method

  • Mix the marinade ingredients together.
  • Cut the speck into 5mm strips and layer the meat.
  • Add meat to the marinade and leave overnight in the fridge.
  • Remove the meat from the marinade, make 4 equal cuts in the surface of the rmeat and place bacon bits into the cuts.
  • Secure with string to form a roll.
  • Sprinkle the steak with salt and pepper.
  • Heat the oil in a heavy-bottomed saucepan and brown meat on both sides.
  • Rduce the heat and add remaining warmed marinade.
  • Cover the pot and simmer until tender.
