The days in South Africa are getting colder and we’re all in the mood for some heart-warming comfort food. A warm braised chicken and mushroom stew is what you need. Our Braised Chicken with Mushrooms & Parmesan recipe is warm and very tasty, perfect for a winter’s evening.

Chicken and mushrooms add protein and great body to this delicious recipe. Braised Chicken with Mushrooms & Parmesan is a healthy meal for the whole family. It’s very nutritious and so easy to make. Preparation time is less than 15 minutes and the cooking time gives you the perfect opportunity to cook your pasta and serve up a great winter’s dish.

Ingredients

  • 4 large 4 chicken breast fillets

  • 300 g 300 portabellini mushrooms

  • 15 + 15 ml 15 + 15 olive oil

  • 3 ml 3 paprika

  • 2 cloves 2 garlic, crushed

  • 60 g 60 butter

  • 15 ml 15 cake flour

  • 250 ml 250 chicken stock

  • 250 ml 250 cream

  • 80 g 80 parmesan cheese, grated

  • ½ bunch ½ spinach, chopped

  • black pepper, ground

  • 10 ml 10 lemon zest

  • 30 ml 30 flat leaf parsley, chopped

Method

  • Heat 15 ml oil in a casserole and season each chicken breast with paprika.
  • Sear the chicken breasts for 3 – 4 minutes per side. Transfer to a plate and set aside.
  • Add the remaining olive oil and fry the garlic and mushrooms.
  • Return the chicken breasts to the casserole and set aside.
  • Melt the butter in a pan stir in the flour until it thickens.
  • Whisk in the chicken stock, cream, half of the Parmesan cheese and cook for 3 – 4 minutes.
  • Return the casserole to the stove and pour the cream sauce over the top. Cover and simmer for 45 – 60 minutes, or until the chicken breasts are tender.
  • Add the spinach and mushrooms. Let simmer for another 2 – 3 minutes.
  • Season well with pepper, and add the lemon zest, parsley and top with the remaining Parmesan cheese.
  • Serve with pasta or mashed potatoes and seasonal vegetables.
