You know, there are some recipes that we love that never get old and they’re often a simple indulgence. Whether you’ve been camping or make them at every braai, classic South African braaibroodjies should always be available. They are the braai day version of a toasted tomato, cheese and onion sandwich. However, depending on your braai, the extra smoke and meat flavours from the grid just improve every single bite.

Cheese and tomato South African braaibroodjies

This is a really simple combination of white bread, butter, tomato, raw onions and some cheddar cheese. You want to use slices of cheese so that it doesn’t fall out and the best option for cooking is with a pinching grid that you can flip. These sandwiches like a good amount of salt and black pepper that season the tomato and onions perfectly. Serve with tomato sauce or your favourite chutney and be sure to make enough because they’re going to fly off of the table.

Ingredients

  • 8 slices white bread

  • 1 large onion, sliced

  • 2 tomatoes, sliced

  • 1 cup cheddar cheese, grated

  • salt and freshly ground black pepper to taste

  • optional sauces like chutney or mayonnaise

Method

  • Spread butter on both sides of the bread slices (butter on the outside of the sandwiches will ensure a crisp, golden crust).
  • Placing tomato and onion slices on half of the slices, season with salt and pepper or with a seasoning of your taste, and top with cheese.
  • Add optional sauces such as mayonnaise and chutney.
  • Cover with the remaining slices of bread.
  • Coat a clean grid lightly with Spray and Cook or cooking oil, place the sandwiches inside a braai grid and slowly toast them until they are golden brown.
  • Serve and enjoy before they cool down.
