If you think of iconic South African food there is just one correct answer, “boerewors“. If you think of the people you love, your mother is also the first person you think of. This Mother’s Day, why not add some iconic South African flavour to the day too? These Boerewors Stuffed Mushrooms are the perfect snacks for celebrating the most important person in your life.

If you have kids, this is one great recipe to teach them about cooking due to the simple ingredients and cooking method. Get your kids to clean the mushrooms and remove the stems before cooking and let them do the stuffing at the end.

Boerewors Stuffed Mushrooms Recipe

Ingredients

  • 250 g 250 boerewors, removed from casings

  • 12 12 Portabellini mushrooms, cleaned, stalks removed and reserved

  • 2 tbsp 2 coconut oil

  • 1 1 red chilli, finely chopped

  • 150 g 150 full-fat cream cheese

  • ¼ cup ¼ chopped flat-leaf parsley

Method

  • Heat oven to 200°C.
  • In the meantime, heat coconut oil in a pan and brown the wors mince, stirring often, about 7 minutes.
  • Finely chop the mushroom stalks and add to the pan with the chilli. Cook for 5 minutes more.
  • Stir in the cream cheese and parsley and taste for seasoning.
  • Pack into the 12 mushroom caps, place into oven and bake for 8 – 10 minutes, until browned and bubbling.
