Craving a sweet treat? Try this blueberry bread butter pudding with Crème Anglaise. It is a tasty combination of the bread pudding we all love and know with a French flair. It will sweeten your day!

This blueberry bread butter pudding contains a good quantity of blueberries, as the name of the pudding indicates. It adds that extra colour and taste to this delightful dessert.

Preparing a bread pudding is super simple but the taste is mind-boggling delicious. Just allow the bread to soak up the sweet milky sauce very well before popping it into the oven and you have a lip-smackingly delicious dessert in the making.

To add some elegance to this blueberry bread butter pudding, a Crème Anglaise is included in this recipe. Basically, Crème Anglaise is a light pouring custard that can be used as a sauce or dessert cream. It is very similar to the usual custard we know, but this is the French version.

Pour a generous quantity of the Crème Anglaise over the bread pudding and enjoy this sweet tooth treat.

Ingredients

  • Blueberry bread butter pudding
  • 18 slices white bread

  • 125 g sugar

  • 3 teaspoons vanilla essence

  • 4 cups milk

  • 125 g blueberries

  • 6 eggs

  • 120 g butter (room temperature)

  • ½ teaspoon ground cinnamon

  • Crème Anglaise
  • 1 litre milk

  • 1 litre cream

  • 1 pod vanilla

  • 6 tablespoons sugar

  • 6 egg yolks

Method

  • Blueberry bread butter pudding
  • Preheat the oven to 200°C.
  • Lightly grease an ovenproof dish with ½ teaspoon butter.
  • Spread the remaining butter on the bread.
  • Cover the base of the dish with overlapping bread slices to fit the dish.
  • Whisk the eggs, milk, sugar, cinnamon and vanilla essence.
  • Pour the mixture into the dish and let the bread absorb all the liquid.
  • Scatter the blueberries over the mixture and bake for 40 minutes until it sets.
  • Once baked, let it cool down and place it in the fridge to set.
  • This may be served with crème Anglaise.
  • Crème Anglaise
  • Pour the milk and cream into a pot.
  • Add the vanilla pod and bring the mixture to simmer for 2 minutes. Remove the pot from the heat.
  • Whisk the egg yolks and sugar, then gradually whisk the milk mixture into the egg mixture.
  • Return the combined mixture to low heat for 10 minutes until the custard is thickened.
  • Test the custard; if it’s not runny, remove it from the heat. Strain, cover and let it chill.
  • This may be served with pudding.
