Is there any snack in South Africa more iconic than biltong? This cured beef snack is great for road trips, watching sport at home or live and sometimes, great when you add it to other food. These biltong and cheese potato fritters with mayo sauce combine two local dishes to make a great dinner side or starter for everybody to enjoy. Served while warm, these fried bites of goodness are great for snack time or even fancy dinner parties.
Everybody has different biltong preferences and you can use your favourite, chopped finely. You can of course also make your own biltong. If you’re a bit strapped with ingredients, you can also use the biltong powder. The potatoes and cheese fry beautifully and become super crispy on the edges and on the bumps on the middle. For the fluffiest mashed potatoes, rice the potatoes after boiling and combine with lots of butter and a good amount of seasoning.
