We have all experienced those evenings when a sweet craving hits you but the sweets cupboard is empty. If you have some basic ingredients in your pantry, you can quickly whip together this two-minute chocolate mug cake. It is moist with such a luxurious depth of chocolate that you will want to prepare it all the time.

Tips when preparing your two-minute chocolate mug cake

After preparing the batter, pour it in the mugs over the chocolate chips. Next, pop the mugs into the microwave for 90 seconds. It is important that you check that your microwave setting is on high. After 90 seconds, check to see if the cakes are puffy and bounce back after lightly touching them. If not, microwave them for an additional 30 seconds.

Serve immediately for the ultimate enjoyment. To add some extra indulgence, pour some creamy custard over the chocolate cakes or serve them with vanilla ice cream.

Ingredients

  • 2 tablespoons 2 vegetable oil

  • ¼ cup ¼ whole milk (60 ml)

  • 1 large 1 egg

  • ½ teaspoon ½ vanilla extract

  • cup self-rising flour (40 grams)

  • ¼ cup ¼ granulated sugar (50 grams)

  • 2 tablespoons 2 unsweetened cocoa powder (10 grams)

  • ¼ cup ¼ semi-sweet chocolate chips (43 grams)

Method

  • In a small bowl, whisk together the vegetable oil, milk, egg and vanilla.
  • Add the flour, sugar, and cocoa and whisk to combine.
  • Divide the chocolate chips between two medium microwave-safe mugs.
  • Pour batter into the mugs over the chocolate chips. Microwave on “high” for 90 seconds. Check to see if the cakes are puffed and bounce back after being lightly touched. If not, microwave for an additional 30 seconds.
  • Serve immediately.
