It is a Levantine-style salad usually made of finely chopped parsley, tomatoes, mint, onion, bulgur, and seasoned with olive oil, lemon juice, salt and sweet pepper. However, this recipe deviates a bit from the traditional recipe giving it a delicious variation with more taste and substance.

Ingredients

  • Tabbouleh
  • 1 can 1 (410g) red kidney beans, drained and rinsed

  • ½ can ½ (205g) chickpeas, drained and rinsed

  • 1 cup 1 cubed cucumber

  • ¼ ¼ red onion, diced

  • 2 stalks 2 celery, chopped

  • 2 cups 2 roughly chopped fresh parsley

  • 2 tablespoons 2 roughly chopped fresh dill

  • Dressing
  • ¼ cup ¼ olive oil

  • ¼ cup ¼ lemon juice

  • 1 clove 1 garlic, crushed

  • salt and pepper to taste

Method

  • Combine the salad ingredients in a bowl and toss.
  • Whisk the dressing ingredients, pour over the salad and toss well. Chill in the fridge until ready to serve.
