Looking for some delicious side dish ideas? Try this mouth-watering stuffed gem squash with creamy spinach recipe. The idea of using the gem squash as little bowls for the creamy spinach does not only look beautiful but tastes well too.

Start off by cooking the gem squash and the creamy spinach separately. When everything is cooked, spoon some of the creamy spinach in each gem squash until you have enough stuffed gem squash to serve four people.

This is a delicious way to prepare gem squash which usually does not have much flavour on its own. The creamy spinach adds so much flavour to the gem squash that you will be tempted to enjoy another one.

  • 5 5 gem squash cut into halves

  • 1 bunch 1 spinach washed and chopped

  • 2 tablespoons 2 butter

  • 1 teaspoon 1 crushed garlic

  • ½ ½ onion cut and chopped

  • 1 teaspoon 1 mixed herb

  • 125 ml 125 fresh cream

  • 2 tablespoons 2 flour

  • salt to taste

  • 250 ml 250 milk

  • 1 litre 1 water


  • In a pot add 750 ml water and simmer the gem squash until soft.
  • Remove from the heat, drain the water and set aside.
  • In a pot, add the garlic, onion, chopped spinach and water and allow it to simmer for 5 minutes and drain the water.
  • In a separate small pot, heat the milk until hot and set it aside.
  • In a separate pot, heat the butter and add the flour, lemon zest and herbs and whisk well for 2 minutes.
  • Add the hot milk and whisk until well combined.
  • Add the spinach, mix well and add the cream.
  • Simmer for 4 minutes, add seasoning to taste and remove from the heat.
  • Stuff the gem squash with the creamy spinach and serve.
