Whip up a piquant side for dinnertime with a delicious spicy couscous recipe. It is loaded with flavour, texture and everything you will love about a spicy side dish.

Combine sautéed veggies with aromatic spices and appetising sauces with fluffy, steamed couscous and you have a side dish that may easily steal the limelight from the main dish.

Tips when preparing spicy couscous

This Mediterranean dish always adds some flair to your dinner table. It pairs perfectly with chicken, lamb, fish, and even vegetarian dishes containing eggplant.

If you want to infuse your couscous with extra flavour, you can use broth instead of boiling water.

When preparing couscous, make sure you do not disturb the couscous, but allow it to fully absorb the hot liquid. Stir the couscous in the boiling liquid and remove it from the heat immediately. Next, quickly cover the couscous with a lid and allow it to sit for about 15 minutes.

Ingredients

  • 1 cup Mediterranean couscous

  • 1 cup boiling water

  • olive oil

  • Veggies
  • 1 red onion, cubed

  • 1 tomato, cubed

  • ½ cup peppers, cubed

  • ½ carrot

  • 1 tbsp crushed garlic

  • Spices
  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp lemon pepper

  • 1 tsp cumin powder

  • 1 tsp garlic and herb spice

  • 1 tbsp brown sugar

  • Sauces
  • 1 tbsp Maggie chilli garlic sauce

  • 1 tbsp Nandos black pepper

  • 1 tbsp sweet chilli sauce

Method

  • Add the couscous to a bowl. Add the olive oil and boiling water. Cover and allow to steam and double in size for 15 minutes.
  • Sautee all the veggies and then add the spices.
  • Cook for a further 2 minutes, remove from heat and add the sauces.
  • Add couscous to the pan, mix well and serve with chicken.
