How to prepare this smoked salmon rose with a cucumber salad

First, prepare the cucumber salad by cutting the cucumber lengthwise in really thin strips. You can also use a vegetable spaghetti maker to prepare the cucumber salad. Next, prepare the appetising dressing with vinegar, sesame oil, sugar and sea salt.

Ingredients

  • 1 Ontario greenhouse seedless cucumber

  • ¼ cup rice vinegar

  • 1 tsp sesame oil

  • ½ tsp white sugar

  • ¼ tsp sea salt

  • 1 avocado

  • 1 smoked salmon rose

Method

  • Trim the ends off the cucumber. Cut the cucumber in half through the centre (that way the noodles won’t be too long). Using a vegetable peeler, very sharp knife or mandolin, slice the cucumber lengthwise into thin ribbons or strips. Place in a medium bowl.
  • Combine vinegar, sesame oil, sugar and sea salt. Stir well to dissolve sugar.
  • Just before serving, pour the dressing over the cucumber ribbons and toss gently.
  • Place in serving bowl, add smoked salmon rose on top, and slice avocado.
