Bring some variation to your dinner table with delicious pineapple and cucumber salad. It is a refreshing side to any family dinner. It is made with cucumber, pineapple, red onions, red and green bell pepper, and mint leaves. This combination complements well with its explosive flavourful dressing!

It is so easy just to stick to the same old salad recipe, being a garden salad or a Greek salad as that is the usual salads to prepare. Most of us can prepare these salads with our eyes closed! However, make dinnertime exciting by bringing in some variation. The beautiful colourful display of this pineapple and cucumber salad will attract everyone’s attention.

Tips when preparing your pineapple and cucumber salad

The dressing makes this salad irresistible, so make sure you drizzle a generous quantity of the dressing over the salad ingredients.

This is not the type of salad you should prepare last minute. Try to prepare it before starting with your other dishes and let it sit in the fridge for at least an hour. This allows for a lovely infusion of flavours.

If you have any leftovers, don’t be afraid to keep them overnight. It tastes even better the next day.

  • Salad
  • 1 1 pineapple, cut into chunks

  • 1 1 cucumber, seeded and cut into half-moon shapes

  • 1 1 red onion, thin slice

  • 1 1 jalapeno, seeded and diced

  • 1 1 avocado, diced

  • 1 1 red bell pepper, diced

  • ¼ cup ¼ cilantro, chopped

  • Dressing
  • 2 tablespoons 2 lime juice

  • ¼ cup ¼ olive oil

  • 2 tablespoons 2 honey

  • ½ teaspoon ½ red pepper flakes, crushed

  • 1 teaspoon 1 white vinegar

  • salt and pepper to taste


  • Add lime juice, olive oil, honey, red pepper flakes, white vinegar, salt, and pepper to a small bowl. Whisk the ingredients together.
  • In a large mixing bowl, add pineapple, cucumber, red onion, jalapeno, avocado, bell pepper, and cilantro.
  • Pour dressing over the pineapple salad and toss until every inch of the pineapple blend is covered with the spicy vinaigrette.
  • Let it sit in the refrigerator for at least an hour or until ready to be served. It tastes even better the next day.
