What is the difference between a madeira cake and a sponge cake?

A madeira cake contains more flour than a sponge cake and as a result, it has a much denser texture. This makes it more suitable for celebratory cakes like wedding cakes when you need to carve the cake and it needs to hold its shape. Oftentimes, this type of cake may crack at the top during the baking process, and it may also dome. But this is nothing to be concerned about as it is quite normal.

Ingredients

  • 225 g 225 butter, softened

  • 1 cup 1 caster sugar

  • 3 teaspoons 3 orange rind, finely grated

  • 1 teaspoon 1 lemon rind, finely grated

  • 3 3 eggs

  • 1 cup 1 self-raising flour

  • ¾ cup ¾ plain flour

  • ½ cup ½ milk

Method

  • Preheat oven to 180°C. Grease a 6cm-deep, 11.5cm x 20cm loaf pan. Line the base and sides with baking paper, extending the paper 2cm from the edge on the long sides.
  • Using an electric mixer, beat butter, sugar and orange and lemon rind until light and fluffy. Add eggs, 1 at a time, beating after each addition. Sift half the flour over the mixture. Fold until just combined. Add half the milk. Fold until just combined. Repeat with remaining flour and milk. Spoon mixture into prepared pan. Smooth surface.
  • Bake for 45 to 50 minutes or until a skewer inserted in the centre comes out clean. Stand in pan for 10 minutes. Turn, top-side up, onto a wire rack. Serve warm or at room temperature.
