If you enjoy all things lemon, you will fall in love with these lemon brownies. They are a delicious teatime treat. And now with spring just around the corner, what is better than sitting outside in the crisp spring air and enjoying a cup of tea with a zesty bite?

This recipe combines the refreshing flavour of lemon and brownies to make the perfect soft and moist bars. The best part however is the amazing lemon glaze you pour over the brownies at the end giving these teatime treats an extra tanginess.

If you need to whip up a teatime treat last minute, this recipe will save the day. Ready in about 30 minutes, these snacks are perfect to prepare when time is not on your side.

After baking your lemony treats for 20-25 minutes, test them with a toothpick. If it comes out clean, then your brownies are ready. Allow them to cool for 10 to 15 minutes. Next, prepare the glaze and allow it to soak into the brownies for the ultimate lemon sweet treat.

Ingredients

  • ½ cup salted butter, softened

  • ¾ cup granulated sugar

  • 1 lemon, zested

  • 2 large eggs

  • 1 tablespoon fresh lemon juice

  • ¾ cup all-purpose flour

  • ½ teaspoon baking powder

  • For the glaze
  • ¾ cup powdered sugar

  • tablespoons fresh lemon juice

Method

  • Lemon brownies
  • Preheat the oven to 180°C. Prepare an 8×8″ pan by spraying with cooking spray or lining with parchment paper, and set aside.
  • In a large bowl or the bowl of a stand mixer, beat together the butter, sugar, and lemon zest until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Then add the lemon juice. Add the flour and baking powder, and mix until just combined.
  • Pour the batter into the prepared pan and smooth it into an even layer. Bake 20-25 minutes, or until a toothpick inserted into the brownies comes out clean. Let cool for 10-15 minutes.
  • Lemon glaze
  • Whisk together the powdered sugar, lemon juice and zest, then pour over the brownies, spreading evenly to coat.
  • Let cool completely before slicing. Then slice into 16 squares.
