Love a sweet bite in the morning? These flapjacks with fried banana give a mouth-watering start to your day. Fluffy and fried to a soft deliciousness, the appetising flavour of these golden flapjacks will invite the family to the breakfast table.

Flapjacks are almost like pancakes, but they are smaller and a bit thicker. They are quick and easy to prepare and delicious to enjoy any time of the day. This specific recipe includes fried banana but there are so many different topping ideas you can play with when preparing them.

Topping ideas for flapjacks with fried banana

Try some other fresh fruits like peaches, strawberries, apples, pears or pineapples as toppings. Berries also work exceptionally well. You can also try some dried apricots or figs for another unique fruity twist. Sprinkle some coconut flakes with cinnamon for some extra delicious flavour.

For some added crunch, chop some raw nuts like almonds, pecans, walnuts, hazelnuts, pistachios, or macadamia nuts and spread them on top of the stack. To deepen the flavour of the nuts, toast them before chopping them.

Ingredients

  • 210 g 210 cake flour

  • 2 tablespoon 2 baking powder

  • ¼ teaspoon ¼ salt

  • 50 g 50 sugar

  • 2 2 eggs, beaten

  • 1 cup 1 milk

  • 2 tablespoons 2 butter, melted

  • 2 2 bananas, sliced

  • oil for frying

  • 80 g 80 maple syrup

Method

  • Mix the dry ingredients. In a separate bowl mix the eggs, milk and butter.
  • Add the dry ingredients to the wet while whisking.
  • Heat a drizzle of oil in a pan over a low to medium heat. Fry the flapjacks, flip and fry until golden on both sides. Peel bananas and cut in half in each.
  • In a same pan add a drizzle of oil, add the bananas and fry add a maple of syrup fry for few minutes.
  • Serve the flapjacks with the fry banana and with some berries if using.
