When the weather cools down, all we want is a little extra little comfort. This cocoa, date and oat energy balls recipe is one of those snack recipes that will give you that sweet indulgence you need.

The best part of this recipe is that it involves no cooking or baking. Simply mix the ingredients together in a blender until relatively smooth. Then, roll into balls with damp hands. And finally, roll in coconut, chopped nuts or cocoa powder. Place these bite-size beauties in the fridge for at least an hour and get ready to enjoy a guilt-free treat.

Ingredients

  • 2 cups 2 rolled oats

  • 3 cups 3 pitted dates

  • 3/4 cup 3/4 good quality cocoa powder

  • 1/2 cup 1/2 smooth peanut butter

  • 1/2 cup 1/2 salted peanuts

  • 1/2 cup 1/2 desiccated coconut

  • pinch of salt

  • 2-3 tablespoons maple syrup

  • 1 tablespoon 1 coconut oil

  • For the coating
  • desiccated coconut

  • cocoa powder

  • chopped nuts

Method

  • Combine all the ingredients in the bowl of a food processor and blend until relatively smooth. The mixture will start clumping together.
  • With damp hands, form the mixture into little balls then roll into coconut, chopped nuts or cocoa powder.
  • Place on a plate lined with parchment paper and chill in the fridge for at least an hour before eating. Place them in an airtight container and store them in the fridge for up to a week.
