With autumn settling in nicely, what is better than preparing all those mouth-watering comfort food dishes? We have another lip-smackingly delicious one for you to add to your list. This chicken lasagna recipe is so rich and creamy that you will not be able to resist a second portion.

Tender chicken is layered with veggies, cheese, and lasagna sheets in an indulgent alfredo inspired sauce. This recipe includes a generous amount of cheese because what is better than lasagna with melted, gooey cheese?

Tips when preparing chicken lasagna

Make sure your lasagna pan is at least three inches deep. This way your delicious lasagna will not bubble over the sides and leave you with a dirty oven. When assembling the lasagna, you may want to consider first putting a little sauce in the pan and then the first sheets of lasagna. That way the first layer will not stick to the pan.

Another useful tip is to allow your lasagna to rest for 10 minutes before cutting it after you have removed it from the oven. This will prevent the layers from sliding immediately apart.

Serve it alongside a crispy green salad and you have a simple dinner that you can make during the weekdays and reheat the next day for lunch.

Ingredients

  • lasagna sheets cooked and cooled

  • 4 cups 4 cooked chicken

  • 3 cups 3 vegetables cooked and cooled

  • 3 cups 3 chopped spinach defrosted and squeezed dry

  • 2 cups 2 cottage cheese or ricotta cheese

  • 2 eggs

  • 2 tablespoons 2 parsley

  • 4 cups 4 mozzarella cheese divided

  • cup shredded parmesan cheese divided

  • Sauce
  • ⅓ cup butter

  • 1 onion diced

  • 2 cloves garlic minced

  • ¼ cup ¼ flour

  • 2 cups 2 milk

  • 2 cups 2 chicken broth

  • 100 grams 100 cream cheese

  • 1 teaspoon 1 dried basil

  • ½ teaspoon ½ oregano

Method

  • Preheat the oven to 360 ⁰C
  • Sauce
  • To make the sauce, melt butter, onion and garlic over medium-low heat. Cook until onion is softened, about 3 minutes. Add flour and cook for 1-2 minutes.
  • Reduce heat to low. Combine milk and broth. Add a small amount at a time whisking to thicken. The mixture will become very thick, continue adding a little bit of liquid at a time whisking until smooth.
  • Once all of the liquid has been added, stir in cream cheese until melted.
  • Remove from heat and add in ⅓ cup parmesan, 1 cup mozzarella cheese, dried basil and oregano.
  • Assembly
  • Combine cottage cheese, eggs, parsley and spinach. Set aside.
  • In an ovenproof dish, layer sheets, sauce, cooked vegetables and half of the chicken. Sprinkle with ½ cup mozzarella, ¼ cup parmesan and ⅓ of the sauce.
  • Add another layer of sheets, chicken, cottage cheese mixture, and sauce. Top again with sheets and sauce. Cover and bake for 40 minutes.
  • Uncover, top with cheese and bake 20-30 minutes more.
