Soft, succulent and drenched in a Napolitano sauce, these cheese and ham chicken breasts are a must-try recipe. When preparing this recipe, make sure you have some toothpicks around. Envelope each chicken breast with a slice of ham and cheese and use a toothpick to keep this mouth-watering combo together.

However, the Napolitana sauce is what brings this dish together. Napolitana sauce is a quick and easy sauce made of tomatoes, garlic, crushed red pepper, and basil. It is also known as marinara in America. As the chicken breasts infuse with this delightful sauce, the chicken breasts become even more tender and loaded with flavour.

Serve these flavour-packed chicken breasts on a bed of fluffy white rice with a generous quantity of Napolitana sauce. Alternatively, have some crusty bread ready or our traditional South African steamed bread that can soak up the delicious sauce. You can even serve this dish on some cooked pasta. Ingredients

  • Chicken
  • 500 g chicken breast

  • 5 slices ham

  • 5 slices cheddar cheese

  • toothpicks

  • 4 teaspoons olive oil

  • Napolitana sauce
  • 2 tablespoons olive oil

  • 2 small brown onions, finely chopped

  • 3 cloves garlic, crushed

  • 2 sprigs fresh oregano

  • 1 bay leaf

  • 1.5 kg ripe tomatoes, core removed, roughly chopped

  • ¾ cup chopped fresh basil leaves

Method

  • Chicken
  • Cut the chicken breast into thin slices. Put on top of each breast a slice of ham and cheese and seal with a toothpick. Follow the same process with all the breasts.
  • Heat oil in a pan and add the breasts. Brown them until golden and crispy, add the Napolitana sauce on top of the breasts and cook for 10 to 15 minutes. Serve while hot.
  • Napolitana sauce
  • Heat oil in a large, deep saucepan over medium heat. Add the onion and cook, stirring for 3 minutes or until the onion has softened.
  • Add the garlic, oregano and bay leaf. Cook, stirring for 1 minute or until fragrant.
  • Add tomatoes and bring to a boil. Reduce the heat to low. Simmer, uncovered, stirring, for 40 minutes or until sauce has thickened.
  • Add the basil and cook, stirring occasionally, for 5 minutes. Season with salt and pepper.
