Tips when preparing apple oatmeal muffins with honey

Make sure to mix your wet and dry ingredients separately. This will prevent the dough from being overworked. When you are mixing all your ingredients together, take care that you do not stir the mixture too much.

As this recipe suggests, the muffin moulds should not be overfilled but two-thirds will do as these beauties will rise to perfection during the baking process.

  • 1 cup 1 rolled oats

  • 2 teaspoons 2 baking powder

  • ½ teaspoon ½ baking soda

  • ½ teaspoon ½ ground cinnamon

  • teaspoon freshly ground nutmeg

  • 2 cups 2 apples, finely chopped

  • 1 egg, beaten with ½ cup milk

  • Generously butter a 12 cup muffin tin (or spray them well with a non-stick spray).
  • Combine the flour, oats, baking powder, baking soda, cinnamon, and nutmeg in a medium-sized bowl and mix well. Set aside.
  • In a small bowl blend the egg and milk with the applesauce, honey, and butter. Add the chopped apples and mix them in well. Pour this mixture over the dry ingredients and mix with a fork just until moistened. Fill the prepared muffin tins two thirds full.

  • Loosen the muffins from the pan with a small spatula and remove them to a wire rack to cool.
