A highlight every Christmas is without a doubt the dessert table. Include this easy lemon pudding to your dessert spread this year to add a zesty flavour to it.

Breaking the sweetness of all the delightful, sweet treats is what every dessert table needs. And this is exactly what this easy lemon pudding brings to the party. It contains a generous quantity of lemon giving this pudding that much desired lemony taste.

Preparing this easy lemon pudding is very straightforward. You can whip all the ingredients together in about ten minutes. Next, put a pan of hot water in the oven, and place the baking dish with the batter into the pan. Bake for 45 minutes and then you can remove your delicious lemon pudding from the oven while enjoying its delicious aroma permeating through your home.

Ingredients

  • 4 4 eggs, separated

  • cup lemon juice

  • 1 teaspoon 1 lemon zest

  • 1 tablespoon 1 butter

  • cups white sugar

  • ½ cup ½ sifted all-purpose flour

  • ½ teaspoon ½ salt

  • cups milk

Method

  • Beat together the egg yolks, lemon juice, lemon rind, and butter or margarine until thick and lemon coloured.
  • Combine the sugar, flour, and salt. Add alternately with milk to the yolk mixture, beating well after each addition.
  • Beat the egg whites until stiff. Blend the egg whites into the batter at a low speed of an electric mixer. Pour into an 8-inch square baking dish or ramekins.
  • Place a pan of hot water in the oven, and set the baking dish into the pan. Bake at 175°C for 45 minutes.
  • Serve with icing on top with fresh berries or with custard.
