With the summe moths going strong, outdoor parties are the best thing possible and you need snacks to go along with the festivities. Not only do beautiful birthday cupcakes look good but they taste great too. The light cupcakes with sweet and buttery icing is always a crowd-pleaser. The recipe is all about the decoration and the creative options are endless with this recipe. They’re great for kids parties, gender reveals or just a bit of fun.

Beautiful birthday cupcakes suggestions

The cake mixture is simple and you can even add some cocoa powder to it if you want something with chocolate. Use food colouring in the icing if you want to double-down on the colours. With different decorations like sprinkles, sweets and fruits, you can create something great to eat and present on the dessert table. The buttery icing is however the one thing you will always come back to and each bite will be perfect.

Ingredients

  • 90 g self-raising flour

  • 90 g castor sugar

  • 1-3 drops vanilla essence

  • 30 g butter

  • 3 eggs

  • For the icing
  • 8 oz. icing sugar

  • 2 tbsp water

  • pink, green and yellow food colouring

  • For decoration
  • glace cherries

  • jellied lemon slices

Method

  • Place 18 baking cases on a tray.
  • Sieve the flour. Whisk the eggs and sugar together in a bowl over a basin of hot water, until the mixture leaves a trail from the whisk.
  • Fold in the flour carefully with a metal spoon and add vanilla essence. Slightly melt the butter and fold in gently.
  • Spoon mixture into the baking cases and bake in a 190°C oven for 10 minutes. Cool.
  • For the icing
  • Sieve the sugar well and divide into three. Add a little water very gradually to each, and tint pink, green and yellow. The icing should be stiff enough to stay in the centre of each cake.
  • Spoon on onto the icing onto the
  • Decorate the yellow 1 ed cakes with a jellied lemon slice, the pink with a glace cherry and the green with a diamond of angelica.
