Even though these beautiful lamb chops probably aren’t the only thing on the fire, they will become the central hero of the meal. The fresh herb dressing is rustic yet refined with zesty and fresh flavours that compliment the lamb by cutting through the richness. These chops can also be made in the kitchen but when you’ve got weather like South Africa, the smokey braai will add an extra layer of flavour and char we love so much on the weekend.

Braai lamb chops with fresh herbs recipe

Ingredients

  • 8 8 lamb chops

  • 2 cloves 2 garlic

  • 4 tbsp 4 fresh lemon juice

  • 1 1 lemon’s zest

  • 3 tbsp 3 chopped fresh rosemary

  • 3 tbsp 3 chopped fresh parsley

  • 1 tbsp 1 chopped fresh thyme

  • 2 2 small fresh bird’s eye chillies, (deseed the chillies if you prefer less heat)

  • cup olive oil

  • salt and black pepper to taste

Method

  • Chop all the herbs finely.
  • Make the dressing by combining the garlic, lemon juice, lemon zest, rosemary, parsley, thyme and olive oil.
  • Season to taste.
  • Divide the dressing in two and set aside.
  • One half will be used to brush on the lamb chops while grilling on the barbecue and the other half will be used to dress the lamb chops at the end.
  • For the braai
  • Brush the grill surface to make sure it is thoroughly clean.
  • Season the lamb chops on both sides with salt and pepper. Place the lamb chops on the grill and brush them with some of the dressing. Braai for 2 minutes on very hot coals, flip and dress with more dressing. Cook until done, place on a plate, cover and let it rest for about 5 minutes.
  • Serve the lamb chops with the remaining dressing drizzled on top. You can finish the dish with an extra drizzle of olive oil. Serve immediately.
