We’re all looking for some hearty dishes to enjoy during winter and most of them are nice and meaty. Most people who enjoy eating beef tend to enjoy mushrooms for their meatiness too. We have combined them in an easy recipe that you can enjoy every weeknight with your family. Meatballs are easy and fun to make, but also versatile, so you won’t get bored. Our baked paprika mushroom meatballs are here for you and are a great family delicacy.

Baked paprika mushroom meatballs

Beef mince of course adds loads of tasty protein and the addition of mushrooms provides more nutrients and fibre with its flavour. If you’re trying to teach the kids to cook, this is a great way to do it. It’s all about shaping and popping it into the oven to cook. The recipe doubles down on the smoked paprika for that light smoke and spice. The sauce is delicious and soaks into the meatballs. You can serve them with sour cream or on a bed of spaghetti if you’re in a pasta mood.

Ingredients

  • Meatballs
  • 250 g 250 beef mince

  • 250 g 250 big brown mushrooms, minced

  • 90 g 90 fresh breadcrumbs

  • 45 ml 45 fresh parsley, chopped

  • 1 1 egg, beaten

  • salt and milled black pepper

  • 15 ml 15 oil

  • Sauce
  • 1 tin 1 tomato and onion mix

  • 250 ml 250 beef stock

  • 15 ml 15 tomato paste or sundried tomato paste

  • 5 ml 5 smoked paprika

  • 1 1 roasted yellow pepper, sliced

  • salt and milled black pepper

  • To serve
  • sour cream

  • smoked paprika

  • oregano or thyme leaves

  • mashed potatoes and seasonal vegetables

Method

  • Meatballs
  • Preheat the oven to 180°C.
  • Combine all of the ingredients, except for the oil, in a mixing bowl.
  • Using floured hands, shape spoonfuls of the mixture into meatballs.
  • Heat the oil in a pan and brown the meatballs on all sides.
  • Transfer the meatballs to an ovenproof casserole.
  • Sauce
  • Mix all of the sauce ingredients together and pour over the meatballs. Season with salt and pepper.
  • Cover and bake in the oven for 20-25 minutes.
  • Top with a swirl of sour cream, a little smoked paprika and oregano leaves.
  • Serve with mashed potatoes and seasonal vegetables.
