Eating healthy can be fun and getting started the right way in the morning is important. You might want to eat cake every day, but that’s probably not the best idea, however, this baked oats with blueberries recipe changes that completely. It has the texture of a cake but is made with healthy whole ingredients, is gluten-free, refined sugar-free and dairy-free. The recipe is for one serving but it’s very possible to make a larger version for the whole week and refrigerate or freeze it.

Baked oats with blueberries hints

The batter is almost like making a oat flour banana bread or cake and is light and fluffy which goes great with fresh berries. You can get creative with using other berries like raspberries and even strawberries. Adding nut butter like almond butter provides some protein and another texture into the mix. You can enjoy it warm or cold and nothing is stopping you from having it for dessert with ice cream or cream either.

Ingredients

  • ½ cup ½ rolled or quick oats

  • 1 1 banana

  • 1 1 egg

  • 1 tbsp 1 maple syrup

  • 1 tsp 1 baking powder

  • ¼ tsp ¼ kosher salt

  • 15 15 blueberries

  • 6 6 raspberries or any berries you like

  • Optional toppings
  • powdered sugar

  • cinnamon

  • nut butter

Method

  • Lightly grease a 5 x 5 oven-safe dish or ramekin. Preheat oven to 180°C.
  • Add oats to the blender. Add banana, egg, and maple syrup. Add baking powder and salt. Blend it all together until you get a smooth batter.
  • Pour the batter into the greased dish. Top with berries. Bake for 20 minutes.
  • Top the baked oats with your choice of optional toppings. Enjoy warm or at room temperature.
