It’s wintertime and all we want is some winter warmers filling our cold bodies with some warmth. This baked mushroom meatballs recipe is everything you will love and want in meatballs and more.

Ever wondered why many meatball recipes include an egg and breadcrumbs? Egg and breadcrumbs serve as binding ingredients and the breadcrumbs give more substance to the dish. The egg makes sure your juicy meatballs don’t fall apart, whereas breadcrumbs keep the meatballs moist and tasty. And that is the secret to preparing baked mushroom meatballs with so much juiciness locked inside.

Ingredients

  • Meatballs
  • 250 g 250 beef mince

  • 250 g 250 big brown mushrooms, minced

  • 90 g 90 fresh breadcrumbs

  • 45 ml 45 fresh parsley, chopped

  • 1 1 egg, beaten

  • salt and milled black pepper

  • 15 ml 15 oil

  • Sauce
  • 1 tin 1 tomato and onion mix

  • 250 ml 250 beef stock

  • 15 ml 15 tomato paste or sundried tomato paste

  • 5 ml 5 smoked paprika

  • 1 1 roasted yellow pepper, sliced

  • salt and milled black pepper

  • To serve
  • sour cream

  • smoked paprika

  • oregano or thyme leaves

  • mashed potatoes and seasonal vegetables

Method

  • Meatballs
  • Preheat the oven to 180°C.
  • Combine all of the ingredients, except for the oil, in a mixing bowl.
  • Using floured hands, shape spoonfuls of the mixture into meatballs.
  • Heat the oil in a pan and brown the meatballs on all sides.
  • Transfer the meatballs to an ovenproof casserole.
  • Sauce
  • Mix all of the sauce ingredients together and pour over the meatballs. Season with salt and pepper.
  • Cover and bake in the oven for 20-25 minutes.
  • Top with a swirl of sour cream, a little smoked paprika and oregano leaves.
  • Serve with mashed potatoes and seasonal vegetables.
