Good times with the family often go with much-loved family dishes. This baked mashed potato is an excellent side dish to prepare with a braai. It is loaded with plenty of cheese, bacon, and roasted garlic for comforting goodness in every bite!

However, this baked mashed potato is so delicious that you will not only want to reserve it for braai occasions but any time you are inviting people over and you want to hang out a bit with your cooking skills.

The combination of cheese, bacon, garlic and fresh herbs are simply delightful. The cream adds a smooth and rich texture to this dish encouraging you to indulge with each bite.

Make sure you have enough time to prepare this baked mashed potato dish as it needs to bake about two hours in the oven to get to its golden perfection. This does not include the prep time you need beforehand.

Ingredients

  • 30 g 30 butter

  • 1 teaspoon 1 olive oil

  • 200 g 200 bacon, diced

  • 1 kg 1 potatoes

  • 1 cup 1 full cream milk

  • 2 cups 2 pouring cream

  • 2 teaspoons 2 crushed garlic

  • 1 teaspoon 1 finely chopped rosemary leaves

  • ½ ½ red onion, chopped

  • ½ teaspoon ½ nutmeg

  • salt and pepper

  • ¼ cup ¼ grated parmesan cheese

  • ¼ cup ¼ grated cheddar cheese

Method

  • Preheat the oven to 160ºC.
  • Grease a 30 cm x 25 cm oven dish with butter.
  • Heat the olive oil in a frying pan. Add the bacon and fry until crispy. Set aside.
  • Peel the potatoes and slice them as thinly as you can. Pat them dry, then cover with a tea towel and set aside.
  • Place the milk, cream, garlic, rosemary, red onion and nutmeg in a large pot. Add a good pinch of salt and pepper. Heat the mixture until it starts to boil. Once you see bubbles forming at the edge of the pot remove from the heat.
  • Layer half of the potato slices in the oven dish, letting them overlap slightly. Season with salt and pepper and sprinkle half of the crispy bacon bits on top. Carefully pour half of the hot cream mixture over the potatoes.
  • Layer the remaining potato slices on top, followed by the rest of the bacon bits. Pour over the leftover cream. Sprinkle the parmesan and cheddar cheese over the top.
  • Bake for 1½ – 2 hours until the potatoes are tender. Allow standing for a few minutes before serving.
