For the best results, sear and brown the chicken pieces in the cast-iron skillet and the best part is that you can pop that straight into the oven. The butter and lemon flavours the chicken without overpowering the tender flesh. Our recipe uses ghee instead of butter for it’s clear yet fantastic taste. Ingredients

  • 1 kg boneless skinless chicken breasts

  • 1 tbsp lemon-pepper seasoning

  • 1 tsp garlic powder

  • 1 tbsp olive oil or avocado oil

  • 3 tbsp clarified butter or ghee, melted

  • ¼ cup chicken broth

  • 2 tbsp fresh lemon zest

  • sea salt

  • black ground pepper, to taste

  • 1 tbsp chopped parsley

Method

  • Preheat the oven to 205°C.
  • Rub the chicken breasts with lemon pepper and garlic powder.
  • Heat the oil in a large heavy-bottomed oven-proof skillet over medium-high heat.
  • Sear the chicken for 2 – 3 minutes on each side or until golden brown.
  • Add in ghee or clarified butter, broth, freshly squeezed lemon juice and zest.
  • Increase the heat to high to bring the liquid to a boil. Cook until thoroughly cooked.
  • Place in the oven for 12 – 15 minutes to bake until golden.
