We all love a delicious dessert and when it comes to chocolate we go even crazier. You can make desserts with chocolate in so many ways and sometimes one comes along that’s great for fancy dinner parties. These baked chocolate custards are like creme brulee without the caramelised sugar on top. They are perfect servings for everybody at the party, be it for a fancy dinner or outdoor braai during the holidays.

You’ll be making homemade custard and if you don’t use chocolate will have many other uses too. When combining the hot milk mixture to the eggs, you’ll need to temper the eggs. This means that you’ll bring the eggs to the same temperature as the hot liquid so the eggs don’t scramble. Not only can you enjoy them as they come out of the oven, but decorate them with chocolate sauce or mousse with whipped cream, nuts and even fruit to turn it into a beautiful and fun dessert.

Ingredients

  • 1 cup 1 milk

  • 1 cup 1 pouring cream

  • 100 g 100 high-quality dark chocolate, broken into small pieces

  • 4 4 egg yolks

  • cup brown sugar

  • 1 tsp 1 vanilla extract

  • canned fruit or fresh fruit, to serve

Method

  • Preheat oven to 150°C.
  • Combine milk and cream in a saucepan over medium heat. Cook, stirring constantly, for 5 minutes or until hot (do not allow to boil). Remove saucepan from heat. Add chocolate and stir until smooth.
  • Whisk egg yolks, sugar and vanilla in a heatproof bowl until well combined.
  • Add a few teaspoons of the warm milk liquid into the eggs and whisk together until combined and still smooth before slowly adding the rest of the liquid and continuously whisking.
  • Pour custard into four lightly-greased, 34 cup capacity ovenproof ramekins. Place in a deep baking tray. Pour boiling water into baking tray until halfway up sides of ramekins.
  • Bake custards, uncovered, for 45 min.
