The braai season is almost here and it’s time to get some new and surprising sides ready. A great dinner or braai side doesn’t overpower the beautifully cooked meat the braaimaster puts on the table. A well-known side is often potato bake but we’ve got a twist on another classic for you. Our baked cauliflower with cheese is a rich and milk side that pairs great with any meat put in front of you.

When you’re adding mushrooms to this tasty dish, it adds some flavour and colour, but dry-fry them ahead of time to remove moisture. You can do the fully loaded version and add broccoli for it’s added colour and loads of iron and calcium along with the mushroom’s fibre. That’s just the tip of the iceberg as you can add bacon bits and extra cheese on top to make it extra salty and cheesy. The flavour ball is in your hands now.

Ingredients

  • 1 1 cauliflower, broken into smaller pieces

  • 40 ml 40 butter

  • 250 ml 250 milk

  • 275 ml 275 cheddar cheese, grated

  • boiling salt water

  • 25 ml 25 flouer

  • 12.5 ml 12.5 dry white wine

  • 430 g 430 button mushrooms

  • chopped parlsey

  • salt and pepper to taste

Method

  • Wash the whole cauliflower and boil in salt water in a large saucepan with stalk pointing upwards. No more than a few minutes so that it’s slightly cooked but still firm.
  • Drain carefully and place in an oven-proof dish.
  • For the white bechamel sauce, melt the butter with the flour and keep whisking until flour smell goes away. Slowly add milk and keep whisking until thick. Remove from the heat and don’t let it boil.
  • Decrease the heat a bit and add the cheese and stir will until fully combined.
  • Add wine and chopped mushrooms. Season with salt and pepper.
  • Pour the sauce over the broken down cauliflower (and broccoli).
  • Grill in the oven for a few minutes under high heat until the cheese is melted and golden brown.
  • To serve, add chopped parsley and a sprinkle of paprika.
