When you have family staying or coming over for a big festive brunch this holiday season, you want something easy to prepare that will feed everybody. A classic frittata is great for breakfast or brunch and even looks great on the table. Our classic bacon and spinach breakfast firttata is as easy as putting everything together and then grilling. You can also make more than one if you have many people coming over.

Bacon and spinach breakfast frittata tips

Bacon is great with everything and the addition of spinach adds colour but also some great nutrients to go with the rest of the healthy ingredients. It’s all about the protein in this great breakfast which will give you lots of energy for the long day with family. The cheese adds to the decadence and flavour because who doesn’t love grilled cheese, right? Serve with some pan fried toast and sweet pancakes for a great brunch.

Bacon and spinach breakfast frittata recipe

A easy mid-morning snack filled with bacon, spinach and feta. Who could resist?

Ingredients

  • 8 eggs

  • 1/2 cup milk

  • 1 tsp salt

  • 1 tsp pepper

  • 2 tsp herbs of your choice, either fresh or dried

  • 1 tsp paprika

  • 1 cup bacon, or meat of your choice

  • 1 cup spinach, or veggies of your choice

  • 1/2 cup feta, or cheese of your choice

Method

  • Preheat the oven to grill.
  • Whisk the eggs, milk, salt, pepper, herbs and paprika together.
  • Lightly grease a large non-stick oven-proof pan. Heat the pan and fry the bacon until cooked thoroughly. Add the spinach, stirring frequently.
  • Once the spinach has wilted (1 minute), add the egg mixture. Using a spatula, gently scrape the sides to allow the egg to cook underneath.
  • Cook until the bottom is almost set, about 8 minutes.
  • Sprinkle the cheese on top and place the pan underneath the grill for 2 – 3 minutes. This will allow the cheese to melt and the top layer of egg to cook. If you don’t have an oven proof pan, cover the pan with a lid and cook on the stove for a few minutes.
  • Cut into wedges and serve warm or cold.
