There is a fact universally known, that bacon is one of the world’s true joys when it comes to food. The cured pork is salty and when cooked just right, is crispy and delicious and there is no comparison. You always want bacon with your fully-loaded breakfast fry-up and we have a special treat for you if you enjoy baking too. Our bacon loaf recipe is just another way to enjoy the perfect meat product that is cured and smoked pork.

Bacon loaf suggestions

To cook perfect crispy bacon, a tiny bit of olive oil and teaspoon of butter goes a long way. Cook the bacon from a cold pan and let it heat with the pan so the fat renders perfectly. Not only will you be baking a great bread but you can also cover it with bread crumbs. If you want to up the decadence, add grated hard cheese into the mixture for a cheese and bacon bread. Serve warm with a big knob of butter and a perfectly fried egg.

Ingredients

  • 45 g 45 butter

  • 45 g 45 browned breadcrumbs

  • 1 large 1 onion, finely chopped

  • 350 g 350 cooked bacon

  • ½ tsp ½ mixed dried herbs

  • ½ tsp ½ grated nutmeg

  • 60 g 60 fresh white breadcrumbs

  • 1 1 egg, blended

  • 120 ml 120 bacon stock

  • freshly ground black pepper

Method

  • Grease a loaf tin with butter and press 30g browned breadcrumbs round the bottom and sides of the tin.
  • Fry finely chopped onion in remaining butter. Mince bacon, add onion and remaining ingredients. If bacon and stock are not very salty, it may be necessary to add a little salt as well.
  • Turn mixture into prepared tin. Cover with foil and bake in a 180°C oven for 1 hour.
  • Turn out, sprinkle with remaining breadcrumbs.
