When you want to make a quick lunch and go to the shops, a toasted sandwich is often the first thing you pick up. However, you know that making a toasted sandwich at home is tastier, cheaper and more fun. This toasted mango atchar and bacon sandwich with all of the cheese switches it up with some spice while you enjoy fresh cooked crispy bacon and add your favourite cheese. It’s the best sandwich you’ll ever have.

Toasted mango atchar and bacon sandwich tips

This recipe uses atchar or more popular, mango atchar. It’s a condiment made from pickled mango and other ingredients which is also very popular in South Africa. It’s not only spicy, but packed with flavour and will work brilliantly with this toasted sandwich. A classic crispy bacon and cheese sandwich needs a good cheese pull, so use American cheese or something like gouda that will give you the picture you’ve always wanted.

Ingredients

  • 4 slices 4 sourdough bread

  • butter

  • 2 tbsp 2 atchar

  • 4 rashers 4 bacon (or cold meat of your choice)

  • ½ cup ½ grated cheese

Method

  • Spread a thick layer of butter on the outside of the sandwich.
  • Add the cooked bacon and cheese.
  • Spread a layer of atchar on two slices of bread.
  • Heat a frying pan over a medium heat.
  • Add the sandwiches to the frying pan and put a plate on top to press the sandwich down.
  • Grill on each side for 3 – 4 minutes until the bread is golden brown and the cheese has melted.
  • Remove the pan and cut in half.
  • Serve with a salad or chips.
