When there’s a braai, there is usually a braai master taking care to cook everybody’s meat to perfection. However, you need sides and South Africans love bringing their signature dish to the party. One of the most popular dishes other than potato bake is a broccoli and cauliflower bake. But, there’s a way to make the latter even better so you have to try this bacon and broccoli casserole with cauliflower and cheese!

Bacon and broccoli casserole suggestions

You don’t really want to overcook the broccoli and cauliflower, so make sure that you only steam until they become a little bit soft but not too much. Broccoli is super healthy with iron and calcium in abundance but it’s also tasty and works well with bacon. Everybody loves a bit of crispy bacon and it’s a welcome addition to this dish which we know so well. Serve while still warm and bubbly with your choice of braai meat and salad.

Ingredients

  • 8 rashers 8 bacon, fried crispy

  • ½ large head ½ cauliflower, cut into florets

  • ½ large head ½ broccoli, cut into florets

  • ½ cup ½ sour cream

  • ½ cup ½ cream cheese softened

  • 1 tbsp 1 mayonnaise, optional

  • 1⁄4 tsp 1⁄4 black pepper, or to taste

  • 2 cups 2 shredded cheddar

  • 3 tBSP 3 chopped fresh parsley, for garnish

Method

  • Preheat your oven to 190°C.
  • Fry the bacon in a large skillet until crispy and crumble. Drain from fat and set aside.
  • Steam cauliflower and broccoli until tender, about 15 to 20 minutes. Or nuke in the microwave with 1 cup of water for 7 or 8 minutes.
  • Combine the sour cream, mayonnaise, cream cheese, and black pepper in a large bowl. Add the steamed cauliflower and broccoli florets, half of the bacon, 1 cup of the cheese, and half the parsley and mix well to combine.
  • Transfer to a baking dish lightly oiled and top with the remaining cheese, and the other half of the bacon.
  • Cover the baking dish with foil and bake for 20 minutes. Remove the aluminum foil and bake another 5-10 minutes or just until cheese is bubbly and beginning to brown.
  • Serve the loaded cauliflower broccoli casserole immediately. Enjoy!
