We all have our famous potato bake recipes, but you’re going to have a new one with this bacon and mushroom baby potato bake recipe.

We believe that potatoes are some of the most versatile ingredients out there and there are so many varieties and things you can do with them. Baby potatoes are great because they cook quickly and you can keep the skins on for a rustic look and they often get a bit crispy. This baby potato bake is a dish you need to try soon because they’re wrapped in smokey bacon with mushrooms and covered in cream, so you know it’s going to be rich and delicious.

Baby potato bake suggestions

For wrapping, streaky bacon is the best to use, not just because of they look great, but they have a good amount of fat that gets super crispy. Everything ends up cooking in bacon fat, so you know it’s going to be incredible. Add some paprika to the mix if you want something spicier and you can also chop some onions and green peppers into the mix if you feel the need for colour and something bright. It’s all going to come together to a rich, creamy and smokey dish that’s perfect for braais.

Ingredients

  • 24 24 semi-cooked baby potatoes

  • 24 24 pieces back bacon

  • 3 3 fresh rosemary twigs

  • 250 ml 250 fresh cream

  • 100 ml 100 sour cream

  • 2 2 crushed garlic cloves

  • 250 g 250 button mushrooms

  • salt and ground black pepper

  • toothpicks

Method

  • Wrap each baby potato with a piece of bacon, securing the bacon with a toothpick.
  • Place the bacon-wrapped potatoes and mushrooms in a greased oven dish. Garnish with salt and pepper. Place the rosemary twigs and garlic between the potatoes.
  • Mix the cream and pour over the potatoes.
  • Bake for 45 minutes at 160°C in the oven.
