Ice cream in the winter? There are many staunch ice cream lovers who will respond with a resounding, “Yes!” to this question. If you can’t go through the winter without ice cream, then you certainly have to try this avocado ice cream recipe. It’s so creamy and delicious!

Avocado is one of the most versatile fruits available. It can be used in starters, main meals and also as a dessert in this delightful avocado ice cream.

This recipe is enough for eight cups of ice cream. So, if you are a big fan of ice cream, it is a good idea to double up on this recipe.

Ingredients

  • 3 medium avocados

  • cup xylitol

  • 1 cup low fat yoghurt

  • ½ cup whipping cream

  • ½ teaspoon vanilla extract

  • 20 g almond flakes

  • ¼ teaspoon lemon juice

Method

  • Add all the ingredients into a blender.
  • Place in a home ice cream machine, and then allow it to churn for 20 minutes. Remove and either serve immediately or freeze and serve later.
  • Make eight 1 cup servings and sprinkle the almond flakes on top with some mint as decoration.
