Asian pears are aromatic and have a sweet-tart flavor with delicate floral notes and low acidity. Ingredients

  • 50 ml 50 Musgrave pink

  • 15 ml 15 litchi syrup (could be cinnamon as well for a more winter feel)

  • 35 ml 35 Asian pear puree

  • 25 ml 25 lemon juice

  • 1 cm 1 lemon grass muddled

Method

  • For the Asian pear puree
  • Blanch 4 white Asian pears on high for 10 minutes, cut into chunks and add to blender add 5% sugar and 5% lemon juice by weight.
  • Blend smooth and strain.
  • For the cocktail
  • Shake and double strain.
  • Garnish with dried pear.
