Do you love apple crumble as much as those living in the USA and right here in South Africa? Here though, apple crumble is enjoyed any time of year instead of during the winter months. Our apple spice cake has all of the same flavours but without the pie crust and topping. Each slice is tender with a kick of cinnamon spice that pairs perfectly well with a cup of tea or coffee. It’s bound to become a new family favourite.

Apple spice cake suggestions

Because this recipe is more of a cake than a tart, you want a deep dish for a taller slice, but you can still make a short pie if you want to. If you have a thin layer, adjust your baking time accordingly. You can also add other spices like allspice to the recipe if you want even more holiday season flavours. Serve your spice cake with a big dollop of whipped cream or a scoop of ice cream for a delicious hot/cold contrast with each bite.

Ingredients

  • 2 cups 2 sliced apples

  • ½ cup ½ brown sugar

  • 1 cup 1 white sugar

  • 110 g 110 butter

  • 2 2 eggs, beaten

  • 2-4 tsp 2-4 ground cinnamon

  • 2 tsp 2 bicarb

  • 1 cup 1 sour cream

  • cups flour

  • mixed nuts, chopped

  • Topping
  • ½ cup ½ brown sugar

  • ½ cup ½ white sugar

  • ½ tsp ½ ground cinnamon

  • ½ cup ½ chopped nuts

Method

  • Combine shortening, sugar, eggs, pinch of salt, spice and blend until fluffy.
  • Add bi-carb to the sour cream and add creamed mixture and with flour.
  • When all is combined, add the apples.
  • Pour into a round baking pan. Add the combined toppings.
  • Bake in preheated 180°C oven for 45-50 minutes.
  • Serve with whipped cream.
