Take apple crumble to the next level with this apple crumble cake. It is the same delicious apple crumble we all love and know but prepared on top of a soft, moist sponge cake.

Although this recipe seems to have many steps, you can have it ready in just over an hour.

When ready, allow to cool and serve with creamy custard or enjoy just as it is. It is tasty enough on its own!

Ingredients

  • Crumble
  • cup brown sugar

  • 1 cup all purpose flour

  • 2 teaspoons ground cinnamon

  • pinch of salt

  • 100 g butter, softened

  • 2 tablespoons cold water

  • Apple syrup
  • 2 Pink Lady apples

  • 30 g of butter

  • 2 tablespoons honey

  • ½ cup brown sugar

  • juice of half a lemon

  • 1 teaspoon ground cinnamon

  • 1 teaspoon mixed spice

  • ½ cup water

  • Sponge cake
  • cups of all purpose flour

  • 1 cup castor sugar

  • 3 teaspoons baking powder

  • 2 large eggs

  • 100 g butter

  • ½ cup milk/water

Method

  • Preheat the oven to 180°C.
  • Crumble
  • Combine the sugar, flour, cinnamon and salt in a medium-sized bowl.
  • Use your hands to rub the butter into the dry ingredients and add the cold water until a crumbly mixture is formed.
  • Apple syrup
  • Peel, core and cut the apples into thin slices and set aside.
  • In a saucepan, add the butter, honey, sugar, lemon, cinnamon, mixed spice and water. Stir on a medium heat until the butter and sugar is melted.
  • Turn the heat off and add the apples. Set saucepan aside and leave to cool.
  • Sponge cake
  • Cream the butter and sugar together until light and fluffy.
  • Beat the egg into the butter mixture, one at a time, until combined.
  • In a separate bowl, sift the flour and baking powder together.
  • Fold half of the flour mixture into the butter/egg mix with a spatula.
  • Once combined, add the rest of the flour. Keep stirring until the flour is well incorporated.
  • Add the milk and stir until the batter is smooth.
  • Line and grease a square 23 x 23 cm baking pan. 
  • Pour the batter into the prepared baking pan and smooth out.
  • Individually layer the apple slices onto the batter in the pan until all the batter is covered.
  • Sprinkle the crumble mixture on top of the apple layer and place in the oven.
  • Bake in preheated oven for 40 – 45 minutes.
  • Once done, poke with a toothpick to check if it comes out clean.
  • Allow to cool and enjoy with custard or on its own.
