It’s time to get preparing your healthy breakfast for the week ahead. If you’ve made the resolution to eat better this year, making healthy snacks and meals ahead of time will be the hardest challenge. Eating well should also taste great which is why you need these almond butter apple oat cups. They are quick to put together and keep well in the fridge, so you can enjoy them on your way out the door in the morning or for a snack during the day.

Almond butter apple oat cups tips

Oats are of course great for your morning meal as it has carbs, a bit of protein and lots of fibre. The apple has lots of vitamins and will make this whole cup taste like apple pie. The texture is soft and the golden outside is like eating a crunchie. You can substitute the maple syrup for honey if you like the health benefits and flavour it provides. They are great with a cup of coffee or tea too and much tastier than your regular bran muffin.

Ingredients

  • Wet ingredients
  • ½ cup ½ unsweetened applesauce

  • ½ cup ½ creamy natural almond butter (or peanut butter)

  • 2 large 2 eggs

  • ¼ cup ¼ pure maple syrup

  • 1 tsp 1 vanilla extract

  • 1 cup 1 almond milk

  • Dry ingredients
  • 2 cups 2 rolled oats

  • 1 tsp 1 baking powder

  • 2 tsp 2 cinnamon

  • ¼ tsp ¼ nutmeg

  • ¼ tsp ¼ allspice

  • ¼ tsp ¼ salt

Method

  • Preheat oven to 180°C.
  • Line a 12 cup muffin pan with muffin liners and spray with nonstick cooking spray.
  • In a medium bowl, mix together the applesauce, almond butter, eggs, maple syrup, vanilla and almond milk until smooth and well combined.
  • Next stir in dry ingredients: oats, baking powder, cinnamon, nutmeg, allspice and salt; stir well to combine. Fold in the diced apples.
  • Evenly distribute batter between muffin liners and bake for 25-30 minutes or until golden brown on top.
  • Once ready to serve, feel free to eat warm or cold.
  • Optional
  • Top with your choice of nut butter.
