We’re all looking to eat healthier while also cooking less. It isn’t so much that we want to cook less, but not cook as long as we used to. Our ovens take a long time to cook food but the air fryer has come to save us. They take less than half the cooking time and a lot less electricity while also ensuring that your food is much healthier. These air fryer fish parcels with vegetables by Shahistah and Instant Pot South Africa is going to become a weekly favourite for sure and it’s ready in under half an hour.

Air fryer fish parcels suggestions

The fish you use doesn’t matter and you can make some salmon or hake, if that’s your preference. The parcels with vegetables ensures that everything is flavoured and you’ll have some sauce too. The sour cream sauce adds some zest and freshness to the recipe. You can also open the parcels up just before they’re ready, turn up the heat and grill them in the air fryer for a few minutes. Pre-cooking your baby potatoes will ensure that they’re also perfectly cooked in the fryer.

Ingredients

  • 4 4 salmon fillets (or white fish like hake)

  • 1 tsp 1 onion powder

  • 1 tsp 1 garlic powder

  • salt and freshly ground black pepper

  • 1 tsp 1 Kashmir chilli powder

  • ½ tsp ½ dried parsley

  • 2 tbsp 2 garlic butter

  • tender stem broccoli

  • Or
  • thinly sliced carrots and peppers

  • For the sour cream sauce
  • 125ml sour cream

  • 1 dash 1 milk

  • ½ tsp ½ onion powder

  • ½ tsp ½ garlic powder

  • ½ tsp ½ dried parsley

  • ½ tsp ½ crushed garlic

  • ½ tsp ½ crushed green chilli

Method

  • Mix all the above spices together then sprinkle on fish.
  • Use baking paper to hold your parcel together. To assemble your fish parcel add 2 slices of lemon to the base. Then your spices, fish top with broccoli and a tablespoon of butter in each parcel. Close your parcel and twist the ends like a sweet wrapper.
  • Place into your preheated air fryer on 180°C and bake for 15 minutes. When done check that fish has cooked through.
  • For the sour cream sauce
  • Mix everything together. Pour over potatoes and fish.
  • Serve with baby potatoes and sour cream sauce.
  • For the baby potatoes
  • When you buy baby potatoes in small packets, cut a tip of the packet and microwave for 8 minutes.
  • You can then add them to the air fryer alongside your fish parcels after covering them with some of the same spices you used in the parcels and some olive oil.
