Well, there are a few ways to have your breakfast and enjoy it even more while on the move. These air fryer blueberry muffins are ready within minutes and you’ll have your breakfast ready and even more for tea time later. The recipe from Instant Pot South Africa will make your mornings even better as you enjoy it with a hot cup of coffee.

Air fryer blueberry muffins tips

You can also change up which berries to use too and they go great with strawberries too. If you can have them while sitting down, break one open and add some jam too. Turn it into a sweet and savoury treat with a slice of cheese and make sure you’ve got a cup of tea or coffee near for a real treat. You’ll know when the muffins are ready when a cake tester or knife pushed into the muffins and pulled out come out clean. Make sure they’ve cooled a bit before eating.

Ingredients

  • ¼ cup ¼ vegetable oil

  • 125 ml 125 castor sugar

  • 1 1 egg

  • 125 ml 125 plain yogurt

  • 5 ml 5 vanilla essence

  • 250 ml 250 cake flour

  • tsp baking powder

  • 1 pinch 1 salt

  • 125 ml 125 fresh or frozen blueberries

  • zest 1 lemon (optional)

  • For the topping
  • zest 2 lemons

  • ½ cup ½ castor sugar

Method

  • Whisk together the oil & castor sugar.
  • Add the egg, yogurt and vanilla essence and mix well. 
  • Sift the flour, baking powder & salt together. 
  • Fold the wet ingredients into the flour mix until the mixture just comes together. 
  • Add the blueberries and lemon zest and fold to incorporate – do not over mix. 
  • Spoon the mixture into 12 silicone cupcake molds.
  • Prehead your air fryer to 180°C for 5 minutes. You may need to cook the muffins in two batches depending on the size of your muffin molds. 
  • Bake your muffins for 10 minutes and check if they’re done by inserting a cake tester or knife which has to come out clean.
  • Allow to cool and enjoy!
  • For the topping
  • Mix the castor sugar and lemon zest together and sprinkle on top of muffins.
