Fill a little one’s heart with joy with this delicious vanilla cake topped with Astros. If you have a special celebration coming up for a young child and you want to bake a cake yourself, this easy recipe is your answer.

Preparing this vanilla cake is not only straightforward but it is also quick. In just over 30 minutes, you can have the cake prepared and steaming hot out of the oven. You just need to allow it to cool down properly before you can ice it with the mouth-watering cream cheese icing. And then, the most important is to decorate it with Astros to make the cake pop with a variety of vibrant colours.

This recipe serves 12 adults, so if you have a party for kiddies, this recipe will serve almost double the number of children, depending on their ages. Just keep a watchful eye as the Astros will start disappearing from the cake before you have cut the cake!

Ingredients

  • Cake
  • 200 g 200 sugar

  • 8 8 eggs

  • 500 ml 500 milk

  • 225 g 225 butter

  • 30 ml 30 vanilla essence

  • 45 g 45 baking powder

  • 1 kg 1 cake flour

  • 3 g 3 salt

  • 80 g 80 Astros

  • Cream cheese icing
  • 120 g 120 butter

  • 225 g 225 cream cheese

  • 10 ml 10 vanilla essence

  • 330 ml 330 icing sugar

Method

  • Cake
  • Sift the cake flour, baking powder and salt.
  • Whisk the eggs and sugar until creamy.
  • Heat the butter, milk and vanilla essence until melted.
  • Take the butter mixture and add to the egg mixture, then fold into the mixture. Be careful not to overmix.
  • Spoon into a round cake tin and bake for 15 to 20 minutes.
  • Remove from the heat to cool down.
  • Cream cheese icing
  • Place the butter, cream cheese, vanilla essence into a bowl of a food processor.
  • Sift the icing sugar with the above ingredients into the bowl of the food processor and process until smooth.
  • Put the cream cheese icing into a piping bag and pipe it onto the cake, add Astros and serve.
