This recipe will teach you to make a simple cheese bechamel sauce which goes perfectly with your Smoked Breakfast Haddock. For the best way to carry this delicious meal, make some pan-fried toast with some butter and your favourite bread. If you want real adventure, add some scrambled eggs.

Ingredients

  • 6 portions smoked haddock

  • 1 tablespoon olive oil

  • 1 diced onion

  • 1 teaspoon fish spice

  • 1 lemon (quartered)

  • 1/4 cup chopped fresh parsley

  • 1 tablespoon butter

  • 1 tablespoon flour

  • 1 cup milk

  • 1 cup grated cheddar cheese

  • salt and pepper

Method

  • In a frying pan, heat the olive oil. Add the onion. Add the haddock and flake it with a fork. Season with salt and pepper and fish spice.
  • Squeeze one quarter lemon over the fish. Let it simmer on low heat.
  • In a saucepan, heat the butter. Add the flour. Add the milk gradually to make a sauce. Stir until there are no lumps. Add the cheese. Season with salt and pepper.
  • Add the haddock to the cheese sauce. Mix through.
  • Serve a slice of toast, garnish with parsley.
