Rye bread is made with various proportions of flour from rye grain. The colour of this bread can vary from light to dark, depending on the type of flour used. Usually, this type of bread is denser than bread made from wheat flour.

With this recipe at your side, there is no need for you to go to the grocery store to buy rye bread. You can easily bake your own at home and enjoy it fresh and warm from the oven. It is simply delightful with a generous slather of butter on a warm slice.

Ingredients

  • 2 packets 2 yeast

  • 2 cups 2 warm milk

  • 1 tablespoon 1 sugar

  • 3 tablespoons 3 butter, melted

  • 1 1 egg

  • 1 teaspoon 1 salt

  • 2 cups 2 rye flour

  • 2 cups 2 all-purpose flour

  • 1 tablespoon 1 caraway seeds

  • 1 teaspoon 1 olive oil

Method

  • Preheat the oven to 180°C.
  • Combine the yeast, sugar, melted butter, egg and milk in a bowl with an electric mixer with a dough hook.
    Beat on low speed for one minute.
  • Add the salt, rye flour, all-purpose flour and caraway seeds and beat at a low speed until well combined into a dough.
  • Remove the dough and put it in an oiled bowl and wrap it with plastic wrap. Let it rest over an hour until double in size.
  • Line 2 baking trays with baking paper, and generously dust them with flour.
  • Make long loaves or a large loaf with the dough and dust it with flour.
  • Bake in the oven for about 30 – 40 minutes, or until it is golden and sounds hollow inside when you tap it.
  • Serve with butter.
